Operations: Sales Income Control, Expenses Control, Sundry Income Control (AWP, Pool, Jukebox), Banking Control, Wet Stock Ordering Control, Wet Stock Delivery Receipt Control, Site Stock Management (counts, wastage, rotation temperature, security), Cellar Management, Regular Operations Audits (property condition, cellar, sales, management controls, systems condition, hygiene). Skills, Knowledge, Experience & Behaviour; Operational Experience: Hospitality Venue Management *, Designated Licensing Official *, EHO Compliance *, Hospitality Business Development, Cash Handling & Banking *, Team Leadership *, Busy Task Management *, Hospitality Venue Sales Budgeting *, Hospitality Venue Cost Budgeting *, Cellar Management *, Weights & Measures *, Recruitment & Interviews *, Performance Management & Coaching *, Health & Safety at Work Management *, Health & Safety Risk Assessments *, Labour Percentage Control *, Food Allergen Control *, AWP & Machine Management.
