Operations: Sales Income Control, Expenses Control, Sundry Income Control (AWP, Pool, Jukebox), Banking Control, Wet Stock Ordering Control, Wet Stock Delivery Receipt Control, Site Stock Management (counts, wastage, rotation temperature, security), Cellar Management, Regular Operations Audits (property condition, cellar, sales, management controls, systems condition, hygiene).
